Ingredients
  

Chicken Marinade
  • 4 pieces chicken breasts (pounded to 1/2-inch thickness) For even grilling
  • 2 tbsp olive oil
  • 1.5 tsp Italian seasoning
  • 0.75 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Toppings
  • 4 slices fresh mozzarella (preferably BelGioioso)
  • 4 slices tomato (cut into 1/4-inch thick rounds)
  • 3 tbsp fresh basil (thinly sliced into ribbons)
Balsamic Glaze
  • 0.5 cup balsamic vinegar (preferably Pompeian)
  • 1.5 tbsp brown sugar

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine the olive oil, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Brush the seasoning mixture over both sides of the chicken breasts.
Cooking
  1. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  2. While the chicken is grilling, prepare the balsamic glaze by combining balsamic vinegar and brown sugar in a small saucepan. Bring to a simmer over medium heat and cook until it thickens, about 5-7 minutes. Remove from heat and let it cool slightly.
  3. In the last minute of grilling, place a slice of mozzarella on each piece of chicken and close the grill lid until the cheese melts.
  4. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
Serving
  1. Top each piece of chicken with tomato slices and fresh basil, and drizzle with the balsamic glaze.

Notes

Store leftover grilled chicken in an airtight container in the refrigerator for up to 3 days. For best flavor, use fresh ingredients.
