  • 1 whole rotisserie chicken, shredded
  • 8 oz pasta (your choice)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • to taste Parmesan cheese, for serving

Method
 

Cooking
  1. Cook the pasta according to package instructions. In the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add the shredded rotisserie chicken and cherry tomatoes to the skillet. Cook for another 2-3 minutes, stirring occasionally.
  4. Combine the pasta and broccoli with the chicken mixture, and season with salt and pepper.
  5. Toss everything together until well mixed and heated through.
  6. Serve hot, topped with Parmesan cheese.

Notes

To store leftovers, let the pasta cool completely, then place it in an airtight container and refrigerate for up to 3 days. Reheat in the microwave or on the stove with a splash of water or olive oil.
