Ingredients
  

For the bowl
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 yellow onion, diced
  • 1 lb lean ground beef (93% preferred)
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 tbsp hot honey
For seasoning
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into small cubes.
  3. Dice the onion and slice the avocado.
Roasting Sweet Potatoes
  1. Toss the diced sweet potatoes in a bowl with 1 tablespoon of olive oil, salt, and pepper.
  2. Spread them on a baking sheet in a single layer.
  3. Roast in the oven for about 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through.
Cooking Beef
  1. While the sweet potatoes roast, heat the remaining tablespoon of olive oil in a skillet over medium heat.
  2. Add the diced onion and sauté until soft, about 5 minutes.
  3. Add the lean ground beef and break it up with a spatula, cooking until browned.
  4. Drain any excess fat and mix in the taco seasoning, paprika, garlic powder, and cinnamon.
Assembly
  1. Once the sweet potatoes are done, remove them from the oven.
  2. In a large bowl or individual serving bowls, layer the roasted sweet potatoes, seasoned beef, cottage cheese, and sliced avocado.
  3. Drizzle the hot honey over the top for a sweet and spicy kick.

Notes

For crispy sweet potatoes, cut them into uniform size. For extra spice, add more hot honey or chopped jalapeños. Ground beef can be substituted with ground turkey or chicken for a lighter option.
