Preparation
- Cut the chicken into bite-sized pieces. If using wooden skewers, soak them in water for 20 minutes.
- In a large bowl, mix the olive oil, minced garlic, oregano, paprika, chili flakes, salt, and pepper. Add the chicken cubes and toss to coat. Let it marinate for 30 minutes.
- In another bowl, combine the grated Parmesan cheese, garlic powder, and onion powder.
Cooking
- Thread the marinated chicken onto the skewers, alternating with any veggies you like.
- Roll the skewers in the Parmesan mixture, pressing gently to coat evenly.
- Preheat the grill to medium-high heat. Cook the skewers for about 10 to 12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
- Garnish the skewers with fresh parsley and serve with lemon wedges for a burst of flavor.
Notes
Make sure to marinate the chicken for at least 30 minutes to soak up the flavors. Use fresh vegetables that cook evenly with the chicken. If using wooden skewers, soaking them prevents them from burning on the grill. To enjoy more flavor, add extra spices or different types of cheese to the Parmesan mix.
