  • 1 cup cauliflower, chopped
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)

  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add shredded chicken, broccoli, and cauliflower to the skillet. Stir in heavy cream, onion powder, garlic powder, salt, and pepper.
  4. Cook for about 5-7 minutes, until the vegetables are slightly tender.
  5. Transfer the mixture to a casserole dish and top with shredded cheese.
Baking
  1. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
  2. Remove from the oven and let cool slightly before serving. Garnish with fresh parsley if desired.

This casserole is best served warm. You can enjoy it on its own or pair it with a simple green salad for a complete meal. It also makes a great dish for potlucks or family gatherings. Optionally, you can use rotisserie chicken to save time and mix in other low-carb vegetables like zucchini or bell peppers.
