  • 1 lb boneless, skinless chicken breasts
  • 1 cup cottage cheese Can use low-fat for a lighter option.
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese Can substitute with cheddar or provolone if necessary.
  • 1/2 cup grated Parmesan cheese
Seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

  • Olive oil For cooking the chicken.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat a bit of olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side until browned and cooked through.
  4. Mix cottage cheese and half of the Parmesan cheese in a bowl while the chicken is cooking.
Assembly and Baking
  1. Once the chicken is cooked, place the chicken breasts in a baking dish. Spread marinara sauce over each piece of chicken.
  2. Spoon the cottage cheese mixture on top of the marinara sauce.
  3. Sprinkle shredded mozzarella cheese and the remaining Parmesan cheese over the chicken.
  4. Bake in the oven for about 20 minutes or until the cheese is bubbly and golden.
  5. Remove from the oven, let it cool for a few minutes, and then serve.

Notes

Serve hot with a side of steamed vegetables, a fresh salad, or over whole wheat pasta. For added flavor, marinate the chicken in Italian dressing for a few hours before cooking. Feel free to add toppings like sliced olives, mushrooms, or spinach for extra nutrition. To store leftovers, refrigerate in an airtight container for up to 3 days or freeze for up to 2 months. Thoroughly thaw before reheating. You can make this dish in advance and store it in the fridge. Bake it before serving.
