Preparation
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- In a large skillet, heat a bit of olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side until browned and cooked through.
- Mix cottage cheese and half of the Parmesan cheese in a bowl while the chicken is cooking.
Assembly and Baking
- Once the chicken is cooked, place the chicken breasts in a baking dish. Spread marinara sauce over each piece of chicken.
- Spoon the cottage cheese mixture on top of the marinara sauce.
- Sprinkle shredded mozzarella cheese and the remaining Parmesan cheese over the chicken.
- Bake in the oven for about 20 minutes or until the cheese is bubbly and golden.
- Remove from the oven, let it cool for a few minutes, and then serve.

Serve hot with a side of steamed vegetables, a fresh salad, or over whole wheat pasta. For added flavor, marinate the chicken in Italian dressing for a few hours before cooking.
