  • 2 pounds chicken breast, diced Use skinless chicken breast for a healthier option.
  • 4 medium sweet potatoes, cubed
  • 1 tablespoon olive oil Can substitute with other healthy oils if desired.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt Adjust salt to taste.
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets Can substitute with other vegetables if preferred.
  • 1/4 cup fresh parsley, chopped For garnish.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced chicken, cubed sweet potatoes, olive oil, garlic powder, paprika, salt, and black pepper. Mix everything well until the chicken and sweet potatoes are evenly coated.
  3. Spread the mixture out on a baking sheet in a single layer to ensure even cooking.
Cooking
  1. Bake for 25-30 minutes or until the chicken is cooked through and the sweet potatoes are tender.
  2. In the last 10 minutes of baking, add the broccoli florets to the baking sheet.
  3. Once done, remove from the oven, garnish with chopped parsley, and let it cool before portioning into meal prep containers.

Notes

For extra flavor, marinate the chicken in spices overnight before cooking. You can use different vegetables like bell peppers or carrots if you prefer. Make sure not to overcrowd the baking sheet for even cooking.
