Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced chicken, cubed sweet potatoes, olive oil, garlic powder, paprika, salt, and black pepper. Mix everything well until the chicken and sweet potatoes are evenly coated.
- Spread the mixture out on a baking sheet in a single layer to ensure even cooking.
Cooking
- Bake for 25-30 minutes or until the chicken is cooked through and the sweet potatoes are tender.
- In the last 10 minutes of baking, add the broccoli florets to the baking sheet.
- Once done, remove from the oven, garnish with chopped parsley, and let it cool before portioning into meal prep containers.
Notes
For extra flavor, marinate the chicken in spices overnight before cooking. You can use different vegetables like bell peppers or carrots if you prefer. Make sure not to overcrowd the baking sheet for even cooking.
