Preparation
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or oil.
- In a mixing bowl, combine the cottage cheese, eggs, shredded cheese, diced bell peppers, and green onions. Season with salt and pepper.
- Pour the mixture evenly into the muffin tin cups.
Baking
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
Serving
- Allow to cool slightly before removing from the tin. Serve warm or store for meal prep.
Notes
These egg bites can be enjoyed on their own or paired with fruit or a light salad. To store leftovers, place in an airtight container in the refrigerator for up to five days or freeze in a freezer-safe container for up to three months. Feel free to mix in your favorite vegetables or meats. To make them spicier, add diced jalapeños or hot sauce. Silicone muffin cups make removal and cleanup easier.
