Ingredients
  

Main Ingredients
  • 100 g Feta cheese Creamy cheese that adds richness
  • 200 g Cherry tomatoes Fresh and sweet
  • 1 medium Red bell pepper Chopped
  • 100 g Fresh spinach Washed and chopped
  • 4 Eggs Large eggs, or as needed
  • 1 tbsp Olive oil For drizzling
  • to taste Salt To season
  • to taste Pepper To season

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a ramekin, add feta cheese and cherry tomatoes.
  3. Chop the red bell pepper and add it to the ramekin.
  4. Add fresh spinach on top.
  5. Crack the eggs over the vegetables and feta.
  6. Drizzle with olive oil and season with salt and pepper.
Cooking
  1. Bake for 20-25 minutes, until the eggs are cooked to your liking.
  2. Serve warm in the ramekins.

Notes

For extra flavor, add herbs like thyme or oregano. Use different colored bell peppers for a vibrant look. If you prefer scrambled eggs, whisk them and mix with other ingredients before baking. For leftovers, store in the refrigerator for up to 2 days and reheat before serving.
