  • 2 tablespoons olive oil For rubbing on the chicken.

  • a handful Fresh herbs (e.g., rosemary, thyme) For flavor.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the olive oil all over the chicken and season generously with salt and pepper.
  4. Stuff the cavity of the chicken with fresh herbs and lemon halves.
Cooking
  1. Place the chicken in a roasting pan and roast for about 1 hour or until the internal temperature reaches 165°F (74°C).
  2. Let it rest for 10-15 minutes before carving and serving.

Notes

For extra crispy skin, let the chicken sit uncovered in the fridge for a few hours before cooking. You can add vegetables like carrots, potatoes, and onions to the pan for added flavor.
