  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 2 tbsp honey or maple syrup Adjust sweetness to taste
  • 2 tbsp lime juice
  • 2 cloves garlic, minced Use fresh for best flavor

  • 1 tbsp vegetable oil For cooking chicken

Method
 

Preparation
  1. In a bowl, whisk together peanut butter, soy sauce, chicken broth, honey, lime juice, garlic, and ginger until smooth.
  2. In a large skillet, heat vegetable oil over medium heat.
Cooking
  1. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  2. Pour the peanut sauce over the chicken and stir to coat.
  3. Cook for an additional 2-3 minutes until the sauce is heated.
Serving
  1. Serve warm, garnished with chopped peanuts and green onions.

Notes

For extra flavor, serve over steamed rice or noodles and pair with stir-fried vegetables or salad. Store leftovers in an airtight container for up to 3 days.
