Ingredients
  

For the beef and rice
  • 1 lb. ground beef Can substitute with shredded chicken or pulled pork.
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. smoked paprika
  • Kosher salt To taste.
  • Freshly ground black pepper To taste.
  • 2 cups cooked white rice
  • 1 Tbsp. lime juice
  • 2 Tbsp. finely chopped cilantro
For the quesadillas and assembly
  • 8 large flour tortillas
  • 1 1/2 cups shredded Cheddar Can substitute with Monterey Jack or Pepper Jack.
  • 1 cup Nacho Cheese Sauce
  • 1/2 cup sour cream

Method
 

Cooking the Beef
  1. Heat a skillet over medium-high heat.
  2. Add ground beef, chili powder, cumin, and smoked paprika. Season with salt and pepper.
  3. Cook until no longer pink, about 6 minutes. Drain the fat.
Making Cilantro Lime Rice
  1. In a bowl, combine cooked white rice with lime juice and chopped cilantro.
  2. Toss to mix well.
Making Quesadillas
  1. Heat a pan over medium heat.
  2. Place one flour tortilla in the pan, sprinkle with shredded Cheddar cheese, and top with another tortilla.
  3. Cook until golden, about 2 minutes per side.
  4. Repeat this process to make 4 quesadillas.
Building Quesaritos
  1. Lay a quesadilla flat on a surface.
  2. Layer with a scoop of cilantro lime rice, seasoned beef, a drizzle of nacho cheese sauce, and sour cream.
  3. Roll it tightly into a burrito shape.
  4. Repeat this with the remaining ingredients.
Reheating
  1. Add two Quesaritos to the pan.
  2. Cook until golden and crispy, about 3-5 minutes per side.
  3. Serve immediately while hot.

Notes

Serve with extra nacho cheese sauce and sour cream on the side. You can also add toppings like salsa, guacamole, or jalapeƱos for extra flavor. For extra flavor in the beef, consider adding salsa. Can be made vegetarian by substituting meat with vegetables or beans.
