Ingredients
  

Vegetables & Herbs
  • 1.5 large English cucumbers, halved and sliced (about 3 cups)
  • 1/4 cup cilantro, minced
  • 3 medium green onions, sliced
  • 1 medium jalapeno, seeded and diced
  • 1/4 medium red onion, diced
  • 1/2 medium red bell pepper, seeded and diced
Proteins
  • 2 cups rotisserie chicken, chopped
Dressings & Condiments
  • 1/2 cup plain Greek yogurt (2% or higher for creaminess)
  • 1/3 cup mayonnaise
  • 1 medium lime, juice and zest of
  • 1 clove garlic, finely minced or grated
Spices
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked pepper
Other
  • 15.25 oz can sweet corn, drained

Method
 

Preparation
  1. Lay the cucumber slices in a single layer on paper towels. Add another layer of paper towels on top and press down to absorb moisture. Leave them to dry while you prep the other ingredients.
  2. In a medium bowl, mix Greek yogurt, mayonnaise, garlic, lime juice, lime zest, seasonings, and salt and pepper. Whisk until smooth. Taste and adjust the seasonings if needed.
  3. In a large mixing bowl, combine the dried cucumbers, corn, chicken, and all the remaining ingredients.
Mixing
  1. Pour most of the dressing over everything and use a spatula to mix until all ingredients are evenly coated. Use the remaining dressing if you want more creaminess.
Serving
  1. Serve chilled and store in the fridge in a tightly sealed container.

Notes

Store leftovers in an airtight container in the fridge. It will stay fresh for up to three days; however, the cucumbers may lose some crunch, but the flavors will blend beautifully over time. Always dry the cucumbers well to avoid a watery salad. Adjust heat level by modifying jalapeno amount.
