Preparation
- Lay the cucumber slices in a single layer on paper towels. Add another layer of paper towels on top and press down to absorb moisture. Leave them to dry while you prep the other ingredients.
- In a medium bowl, mix Greek yogurt, mayonnaise, garlic, lime juice, lime zest, seasonings, and salt and pepper. Whisk until smooth. Taste and adjust the seasonings if needed.
- In a large mixing bowl, combine the dried cucumbers, corn, chicken, and all the remaining ingredients.
Mixing
- Pour most of the dressing over everything and use a spatula to mix until all ingredients are evenly coated. Use the remaining dressing if you want more creaminess.
Serving
- Serve chilled and store in the fridge in a tightly sealed container.
Notes
Store leftovers in an airtight container in the fridge. It will stay fresh for up to three days; however, the cucumbers may lose some crunch, but the flavors will blend beautifully over time. Always dry the cucumbers well to avoid a watery salad. Adjust heat level by modifying jalapeno amount.
