  • 1 pound steak (ribeye or sirloin), cut into bite-sized pieces Choose a good cut of steak for best flavor.
  • 2 medium sweet potatoes, diced Cut into similar-sized pieces for even cooking.
  • 1 medium bell pepper, sliced
Seasonings and oil
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder Adjust to taste.
  • 1 teaspoon paprika Can substitute with chili powder or omit.
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional) Garnish before serving.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the steak bites, diced sweet potatoes, and sliced bell pepper.
  3. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture in a single layer on a baking sheet.
Cooking
  1. Roast in the oven for 20-25 minutes or until the sweet potatoes are tender and the steak is cooked to your liking.
  2. Garnish with fresh parsley if desired and serve warm.

Notes

This dish is great on its own or served with a fresh salad or rice. Store leftovers in an airtight container for up to 3 days and reheat before serving. Feel free to add more vegetables or swap sweet potatoes for regular potatoes or cauliflower for variations.
