Sweet Potatoes
  • 2 medium sweet potatoes, peeled and diced Cut into uniform pieces for even cooking.

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the potatoes out on a baking sheet and roast for about 25-30 minutes, or until tender and golden, flipping halfway through.
Cooking
  1. Meanwhile, in a skillet, heat the remaining tablespoon of olive oil over medium-high heat.
  2. Add the steak bites and season with salt and pepper. Cook for about 3-5 minutes, until they are browned and cooked to your desired level of doneness.
Serving
  1. Serve the steak bites alongside the roasted sweet potatoes, garnished with fresh herbs if desired.
