For the Tacos
  • 8 small corn tortillas Perfect carriers for all that beefy goodness.

Method
 

Preparation
  1. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until softened.
  2. Add the minced garlic and cook for another minute.
Making the Chipotle Sauce
  1. Stir in the minced chipotle in adobo sauce, ground cumin, smoked paprika, chili powder, salt, and pepper.
  2. Cook for about 2 minutes until fragrant.
Cooking the Beef
  1. Add the ground beef to the skillet. Cook until the beef is browned and fully cooked, breaking it apart with a spatula. This takes about 6-8 minutes. Make sure it’s well mixed with the spices.
Assembling the Tacos
  1. Warm the corn tortillas in a separate skillet or microwave.
  2. Fill each tortilla with the chipotle beef mixture. Top with shredded lettuce, diced tomatoes, shredded cheese, and sliced avocado.
  3. Garnish with fresh cilantro and serve with lime wedges.

Notes

Use fresh ingredients for the best flavor. If you like it spicier, add more chipotle in adobo sauce or some hot sauce. Feel free to use ground turkey or chicken instead of beef for a lighter version. Taco bar setup recommended for serving.
