  • 1 can tuna, drained
  • 1 can garbanzo beans, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup bell pepper, chopped
  • 1/4 cup celery, chopped
Dressing and Seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. In a large mixing bowl, combine the drained tuna and rinsed garbanzo beans.
  2. Add the chopped red onion, bell pepper, and celery to the bowl.
  3. Drizzle the olive oil and lemon juice over the mixture.
  4. Season with salt and pepper to taste.
  5. Gently mix everything together until well combined.
  6. If desired, garnish with fresh parsley.
  7. Serve chilled or at room temperature on its own, on a bed of greens, or as a filling in a wrap or sandwich.

Notes

For extra flavor, try adding your favorite herbs and spices, such as garlic powder or cumin. Substitute vegetables based on availability, or add Greek yogurt or mayonnaise for creaminess. Diced avocado or sweet corn can enhance sweetness. Store leftovers in an airtight container in the refrigerator for up to 3 days, and stir before serving again to refresh the taste.
