  • 4 tablespoons garlic butter
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (like carrots, bell peppers, and broccoli)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes and mixed vegetables with melted garlic butter.
  3. Season with salt and pepper, then toss to coat everything evenly.
  4. Spread the chicken breasts on a sheet pan and arrange the veggies around them.
Cooking
  1. Bake for 25-30 minutes until the chicken is cooked through and the veggies are tender.
  2. Garnish with fresh parsley before serving.

Notes

To save time, prep the veggies and chicken ahead of time and store them in the fridge until you’re ready to cook. Use a meat thermometer to check the chicken's doneness. It should read 165°F (74°C) in the thickest part of the breast. Feel free to customize the vegetables based on what you have on hand or what’s in season.
