  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Green onions for garnish

Method
 

Preparation
  1. Cook the rice noodles according to package instructions and set aside.
  2. Heat sesame oil in a large pan over medium heat.
  3. Add garlic and ginger, sautéing for about 1 minute.
  4. Add your choice of protein and cook until done.
  5. Stir in the mixed vegetables and cook until they are tender.
  6. Add the cooked rice noodles and soy sauce, tossing everything together.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with green onions.

Notes

Make sure to not overcook the vegetables; they should remain crisp. You can use leftover proteins or vegetables to save time. Adjust the soy sauce based on your taste preference. This dish pairs well with lime wedges for a zesty kick.
