  • 500 ml vodka or neutral spirit Use a good quality spirit for better infusion.
  • 250 g sugar Adjust the sugar to your taste for sweetness.
  • 250 ml water Used to make simple syrup.
  • 1 whole lemon, juiced Fresh lemon juice enhances the flavor.

Method
 

Preparation
  1. In a large jar, combine the chopped rhubarb and vodka.
  2. Seal the jar and let it sit in a cool, dark place for about 4 to 6 weeks, shaking it gently every few days.
Making Simple Syrup
  1. In a saucepan, combine sugar and water, and heat until the sugar dissolves to make a simple syrup.
Final Preparation
  1. Once the infusion period is complete, strain the rhubarb mixture through a fine mesh sieve or cheesecloth into a clean bottle.
  2. Add the lemon juice and simple syrup to the infused vodka, stirring to combine.
  3. Seal the bottle and let it mature for another couple of weeks before enjoying.

Notes

Store the liqueur in a cool, dark place. It will last for a long time as the alcohol helps preserve it. Shake the jar every few days during the infusion, and let it mature longer if a richer flavor is desired. You can also store it in the refrigerator for a chilled serving option. Consider adding other flavors like strawberries, ginger, or herbs for variety.
