Ingredients
  

For the Chicken Marinade
  • 1 lb chicken (cut into 1-inch pieces)
  • 1/3 cup olive oil (plus 1 tbsp for tzatziki)
  • 1 tbsp lemon zest (from about 1 large lemon)
  • 2 tbsp lemon juice
  • 2 1/2 tbsp honey
  • 1 1/2 tsp garlic powder
  • 2 tsp oregano
  • 1 1/2 tsp basil
  • 1 tsp salt (plus 1/4 tsp for tzatziki)
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (adjust to taste)
For the Tzatziki Sauce
  • 1 cup yogurt (plain full-fat Greek)
  • 3/4 cup cucumber (grated and squeezed dry)
  • 1 tsp garlic (minced)
  • 1 tbsp lemon juice (for tzatziki)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 1/2 tbsp dill (freshly chopped)
For Serving
  • 2 cups rice (cooked according to package directions)
  • 2 cups tomatoes (halved or diced)
  • 2 cups cucumber (diced into 1/2-inch pieces)
  • 4 cups lettuce (chopped)
  • 1 cup onion (thinly sliced)
  • 3/4 cup feta (crumbled)

Method
 

Marinade Preparation
  1. In a bowl, mix the olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes.
  2. Add the chicken pieces to the marinade. Cover and let it sit in the fridge for at least 30 minutes.
Tzatziki Preparation
  1. In another bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and dill.
  2. Mix well. Cover and set aside in the fridge.
Cooking
  1. After marinating the chicken, heat a skillet over medium heat.
  2. Add the marinated chicken and cook for about 8-10 minutes until it’s fully cooked and golden brown.
Serving
  1. To serve, start with a base of cooked rice in each bowl.
  2. Add the grilled chicken pieces on top, then layer with tomatoes, cucumber, onion, and lettuce.
  3. Finally, drizzle generously with tzatziki sauce and sprinkle with crumbled feta cheese. Enjoy your vibrant and hearty meal!

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Keep the tzatziki sauce separate to maintain the freshness of the vegetables and prevent them from getting soggy.
