  • 4 pieces Sweet potatoes Medium-sized
  • 1 lb Ground turkey or chicken Lean ground meat
  • 1 can Black beans Drained and rinsed
  • 1 cup Quinoa Cooked
  • 1 cup Corn Frozen or canned
  • 1 cup Cheese (optional) Shredded cheese of choice
  • 1/2 cup Sour cream or Greek yogurt For serving
  • 1 tbsp Spices (cumin, paprika, garlic powder) Adjust to taste
  • to taste Salt and pepper For seasoning
  • as desired Toppings (green onions, cilantro, avocado) For serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork, then bake for about 45 minutes to an hour until soft.
Cooking
  1. While sweet potatoes are baking, cook the ground turkey or chicken in a pan over medium heat until browned.
  2. Stir in black beans, quinoa, corn, and spices. Mix well and cook for an additional 5-10 minutes.
Assembly
  1. Once the sweet potatoes are done, let them cool slightly, then slice them open.
  2. Fill each sweet potato with the protein mixture.
  3. Top with cheese if desired, then return to the oven for another 10 minutes.
  4. Serve with sour cream or Greek yogurt and your favorite toppings.

Notes

For an extra flavor boost, try adding your favorite hot sauce to the filling. If you want a vegetarian option, you can replace the ground meat with extra beans or lentils. Feel free to use different spices to suit your taste.
