Preparation

Cooking
- While sweet potatoes are baking, cook the ground turkey or chicken in a pan over medium heat until browned.
- Stir in black beans, quinoa, corn, and spices. Mix well and cook for an additional 5-10 minutes.
Assembly
- Once the sweet potatoes are done, let them cool slightly, then slice them open.
- Fill each sweet potato with the protein mixture.
- Top with cheese if desired, then return to the oven for another 10 minutes.
- Serve with sour cream or Greek yogurt and your favorite toppings.
Notes
For an extra flavor boost, try adding your favorite hot sauce to the filling. If you want a vegetarian option, you can replace the ground meat with extra beans or lentils. Feel free to use different spices to suit your taste.
