- Wash the mixed greens thoroughly and dry them gently with a salad spinner or paper towels.
- Slice your pear or apple and set aside.
- If using a whole pomegranate, cut it open and extract the seeds.
Make the Dressing
- In a small bowl, whisk together the honey, Dijon mustard, and olive oil until fully combined.
- Add salt and pepper to taste.
Combine and Serve
- In a large bowl, combine the mixed greens, pomegranate seeds, sliced pear or apple, chopped nuts, and feta cheese.
- Drizzle the honey mustard dressing over the salad and toss gently to coat all the ingredients evenly.
- Serve right away or let it chill in the refrigerator for 10 minutes.
Notes
This salad is best served fresh. Keep the dressing separate until serving to prevent the greens from wilting. Leftovers can be stored in an airtight container for 1-2 days.
