Ingredients
  

Salad Ingredients
  • 4 cups Mixed greens (such as spinach and arugula) Wash and dry thoroughly.
  • 1 cup Pomegranate seeds Can use fresh or thawed frozen.
  • 1 Sliced pear or apple Can substitute with either.
  • 1/2 cup Feta cheese (or goat cheese) Choose your preferred cheese.
  • 1/2 cup Chopped walnuts or pecans Toasted nuts enhance flavor.
Dressing Ingredients
  • 3 tbsp Honey
  • 1 tbsp Dijon mustard
  • 1/4 cup Olive oil
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash the mixed greens thoroughly and dry them gently with a salad spinner or paper towels.
  2. Slice your pear or apple and set aside.
  3. If using a whole pomegranate, cut it open and extract the seeds.
Make the Dressing
  1. In a small bowl, whisk together the honey, Dijon mustard, and olive oil until fully combined.
  2. Add salt and pepper to taste.
Combine and Serve
  1. In a large bowl, combine the mixed greens, pomegranate seeds, sliced pear or apple, chopped nuts, and feta cheese.
  2. Drizzle the honey mustard dressing over the salad and toss gently to coat all the ingredients evenly.
  3. Serve right away or let it chill in the refrigerator for 10 minutes.

Notes

This salad is best served fresh. Keep the dressing separate until serving to prevent the greens from wilting. Leftovers can be stored in an airtight container for 1-2 days.
