  • 1 green bell pepper, diced Feel free to use other colors of bell peppers.
  • 8 ounces mushrooms, sliced Button or cremini mushrooms work well.
  • 2 cups cooked pasta Rotini or penne are great choices.
  • 2 cups shredded provolone cheese Can substitute with mozzarella or cheddar.
  • 1 cup beef broth Use low-sodium beef broth if desired.
  • 1 tablespoon Worcestershire sauce Adds depth of flavor.
  • Salt and pepper to taste Adjust according to preference.
  • Chopped parsley for garnish (optional) Adds color and freshness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the onion, green bell pepper, and mushrooms; cook until the vegetables are softened.
  4. Stir in the cooked pasta, beef broth, Worcestershire sauce, salt, and pepper.
  5. Transfer the mixture to a baking dish and top with shredded provolone cheese.
Baking
  1. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  2. Garnish with chopped parsley and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to two months. Thaw overnight in the fridge before baking. For additional flavor, season the ground beef with garlic powder or onion powder while cooking. Mix in other vegetables for extra nutrition, and add jalapeños or crushed red pepper for spice.
