Main ingredients
  • 1 lb steak (ribeye or sirloin), thinly sliced Tender and juicy ribeye is recommended for best flavor.
  • 1 medium bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup mushrooms, sliced
  • 2 cups cauliflower rice Frozen cauliflower rice can be used to save time.
  • 1 cup provolone cheese, shredded Pepper jack cheese can be used for a spicier kick.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
Optional toppings
  • hot sauce For extra heat.
  • jalapeños For crunch.
  • parsley For garnish.

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onion and bell pepper, sauté until softened.
  3. Add mushrooms and cook until tender.
  4. Push vegetables to the side and add the steak, cooking until browned. Season with salt and pepper.
  5. Serve steak and vegetables over cauliflower rice.
  6. Top with shredded provolone cheese and any additional toppings you desire.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave until warmed through. For the best flavor, use thinly sliced vegetables and consider customizing with zucchini or spinach.
