Preparation
  1. Start by gathering all your ingredients. Slice the avocado, halve the cherry tomatoes, and tear the mozzarella or burrata.
Cooking
  1. In a non-stick skillet, heat olive oil over medium heat.
  2. Crack the eggs gently into the pan. Cook them sunny-side up until the whites are set but the yolks remain runny, about 3-4 minutes.
  3. While the eggs cook, season them with salt, pepper, and red pepper flakes, if using.
Assembly
  1. Once the eggs are cooked, remove the skillet from the heat.
  2. Spread a layer of basil pesto on your plates.
  3. Place the fried eggs on top, then add all the toppings: mozzarella, goat cheese, ricotta, avocado, crispy prosciutto, and everything else you love.
  4. Finish with a sprinkle of everything bagel seasoning and shaved parmesan.

Notes

Use fresh eggs for better flavor and texture. Customize the toppings based on what you have on hand or personal preferences. For extra flavor, add some sautéed mushrooms or spinach to the eggs while they cook.
For a vegetarian version, simply omit the crispy prosciutto or pancetta. You can also experiment with different cheeses or add seasonal vegetables like asparagus or bell peppers.
