  • 4 pieces boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper and add them to the skillet.
  4. Sear the chicken for about 5-7 minutes on each side until browned.
  5. Pour the balsamic vinegar over the chicken and bring to a simmer.
  6. Add the halved cherry tomatoes and cook for an additional 2-3 minutes.
  7. Sprinkle the mozzarella cheese over the chicken and transfer the skillet to the oven.
  8. Bake for 15-20 minutes until the chicken is cooked through and the cheese is melted.
  9. Remove from the oven and garnish with fresh basil before serving.

Notes

Serve hot with rice or pasta to soak up the sauce. A green salad or crusty bread is recommended on the side. For a thicker sauce, let it simmer longer after adding balsamic vinegar.
