Preparation
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper and add them to the skillet.
- Sear the chicken for about 5-7 minutes on each side until browned.
- Pour the balsamic vinegar over the chicken and bring to a simmer.
- Add the halved cherry tomatoes and cook for an additional 2-3 minutes.
- Sprinkle the mozzarella cheese over the chicken and transfer the skillet to the oven.
- Bake for 15-20 minutes until the chicken is cooked through and the cheese is melted.
- Remove from the oven and garnish with fresh basil before serving.
Notes
Serve hot with rice or pasta to soak up the sauce. A green salad or crusty bread is recommended on the side. For a thicker sauce, let it simmer longer after adding balsamic vinegar.
