  • 2 cups Fresh spinach Wilted
  • 1 cup Feta cheese Crumbled
  • 1 cup Mozzarella cheese Shredded
  • 4 pieces Tortillas Flour or corn
  • 2 tablespoons Olive oil For cooking
  • to taste Salt
  • to taste Pepper
Serving suggestion
  • 1 cup Tzatziki For serving

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat.
  2. Add spinach and cook until wilted.
  3. Remove from heat and mix in feta and mozzarella.
Cooking
  1. Place a tortilla in the skillet, add the spinach and cheese mixture on one half, and fold over.
  2. Cook until golden brown on both sides and cheese is melted.
Serving
  1. Serve these quesadillas warm, sliced into wedges with tzatziki on the side.

Notes

Wilting the spinach well ensures a crispy quesadilla. Feel free to customize with additional Mediterranean ingredients such as olives or sun-dried tomatoes.
