  • 1/4 cup Maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
Main ingredients
  • 4 pieces Chicken breasts Can substitute with chicken thighs for juicier option.
  • 2 medium Sweet potatoes Chopped.
  • 2 cups Vegetables (such as broccoli or bell peppers) Chopped.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, Dijon mustard, olive oil, salt, pepper, and garlic powder to create the marinade.
  3. Coat the chicken breasts with the marinade and let them marinate for at least 30 minutes.
  4. Chop the sweet potatoes and any other vegetables you plan to include.
Cooking
  1. Place the marinated chicken and chopped sweet potatoes on a baking sheet.
  2. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
Serving
  1. Serve the chicken on a bed of sweet potatoes and roasted vegetables in bowls.
  2. Add a sprinkle of fresh herbs, like parsley or cilantro, for extra flavor.
  3. Drizzle extra maple syrup or mustard on top if you desire.

Notes

For more flavor, let the chicken marinate overnight. Use a variety of colorful vegetables to make your bowls more appealing. Add nuts or seeds as a topping before serving.
