Preparation
- Preheat the oven to 375°F (190°C) or heat oil in a pan for frying.
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, dip in beaten eggs, then coat with breadcrumbs.
Cooking
- If baking, place the chicken on a greased baking sheet. If frying, add to the hot oil.
- Cook until golden brown and cooked through, about 6-7 minutes per side.
- Top each chicken breast with a slice of ham and Swiss cheese.
- Bake for 5-7 minutes or until the cheese is melted.
- Drizzle with honey mustard sauce before serving.
Notes
Malibu Chicken is best served hot with steamed vegetables or a fresh salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. Make ahead by prepping and coating the chicken a few hours in advance.
