Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) or heat oil in a pan for frying.
  2. Season the chicken breasts with salt and pepper.
  3. Dredge each chicken breast in flour, dip in beaten eggs, then coat with breadcrumbs.
Cooking
  1. If baking, place the chicken on a greased baking sheet. If frying, add to the hot oil.
  2. Cook until golden brown and cooked through, about 6-7 minutes per side.
  3. Top each chicken breast with a slice of ham and Swiss cheese.
  4. Bake for 5-7 minutes or until the cheese is melted.
  5. Drizzle with honey mustard sauce before serving.

Notes

Malibu Chicken is best served hot with steamed vegetables or a fresh salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. Make ahead by prepping and coating the chicken a few hours in advance.
