  • 6 pieces English muffins Split in half
  • 6 large Eggs Cook as preferred (scrambled, fried, or poached)
  • 6 slices Cheese (cheddar or your choice) Pick your favorite cheese
  • 6 ounces Cooked breakfast sausage (or bacon, or turkey) Cooked and crumbled or sliced
  • to taste Salt For seasoning
  • to taste Pepper For seasoning
  • to taste Butter or oil for cooking For frying the eggs

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the eggs in a skillet, seasoning with salt and pepper. You can scramble them or cook them as you prefer (fried or poached).
  3. Slice the English muffins in half and toast them slightly.
  4. Layer the cooked eggs, cheese, and sausage on one half of the muffin.
  5. Top with the other half and press down gently.
  6. Wrap each sandwich in parchment paper or foil and place them in a freezer-safe bag.
  7. To reheat, simply remove from the freezer, unwrap, and heat in the microwave for about 1-2 minutes on high or until warmed through.

Notes

Make a big batch on the weekend, so you have easy breakfasts all week. Use different types of cheese and meats to keep things interesting. Customize with veggies, like spinach or bell peppers, for added nutrition.
