Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat, then drain excess fat.
- Add taco seasoning and diced tomatoes, and cook for another 5 minutes.
Assembly and Baking
- In a large casserole dish, layer the beef mixture, followed by cauliflower rice, sour cream, and half of the cheese.
- Top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
Serving
- Serve hot, garnished with your favorite taco toppings.
Notes
For extra flavor, consider adding chopped onions and bell peppers when cooking the beef. You can use ground turkey or chicken instead of beef for a lighter option. If you don’t have cauliflower rice, shredded zucchini works well too. Feel free to adjust the amount of cheese based on your preference. Leftovers can last in the fridge for up to 3-4 days or in a freezer for up to 2 months. Thaw and reheat when ready.
