  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes (or salsa) Can use fresh or canned.
  • 1 tablespoon taco seasoning Try different varieties for extra flavor.
  • 1 cup chopped bell peppers Optional ingredient.
  • 1/2 cup sliced black olives Optional ingredient.
  • to taste olive oil for cooking Use as needed for sautéing.
  • as desired lettuce and avocado for topping Optional toppings.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and cook the ground beef until browned. Drain excess fat.
  3. Stir in the taco seasoning, diced tomatoes, and optional bell peppers. Cook for an additional 5 minutes.
Baking
  1. In a baking dish, layer the meat mixture and top with shredded cheese.
  2. Bake in the preheated oven for about 15-20 minutes or until the cheese is bubbly and golden.
Serving
  1. Serve warm, topped with lettuce, avocado, and olives if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven or microwave until warmed through. Can be frozen for 2-3 months if cooled before sealing.
