Preparation
- Preheat your oven to 400°F and lightly grease a medium baking dish.
- Heat olive oil in a skillet over medium heat. Sauté garlic for 1 minute, then add tomatoes and spinach. Cook until spinach wilts.
- Stir in heavy cream, cream cheese, Parmesan, Italian seasoning, paprika, and red pepper flakes if using. Simmer for 3–4 minutes until the sauce thickens slightly.
Assembly and Baking
- Arrange shrimp in a single layer in the baking dish and season with salt and pepper.
- Pour the cream sauce evenly over the shrimp and gently toss to coat.
- Sprinkle mozzarella over the top and bake uncovered for 12–15 minutes until shrimp are pink and cheese is bubbly and lightly golden.
- Garnish with fresh parsley and serve hot.
Notes
This dish pairs well with a side salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
