  • 2 cups cauliflower rice Fresh or pre-packaged
  • 1 tablespoon olive oil For cooking
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

  • diced tomatoes
  • shredded lettuce
  • avocado
  • sour cream
  • cilantro

Method
 

Cooking Chicken
  1. In a skillet, heat olive oil over medium heat.
  2. Add ground chicken and cook until no longer pink.
  3. Stir in chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes.
Cooking Cauliflower Rice
  1. In another pan, sauté cauliflower rice until tender.
Assembling the Bowl
  1. In a bowl, layer the cauliflower rice, seasoned chicken, and your choice of toppings.
  2. Serve warm.
