Ingredients
  

For the Roasted Potatoes
  • 4 medium Potatoes Cut into even pieces for uniform cooking.
  • 2 tablespoons Olive oil For tossing the potatoes.
  • 2 tablespoons Seasoning (e.g., taco seasoning) To taste.
For the Filling
  • 1 pound Ground beef Cooked with seasoning.
Toppings
  • 1 cup Cheese (e.g., cheddar) Shredded.
  • 1 cup Sour cream
  • 1/4 cup Green onions Chopped.
  • 1 cup Lettuce Shredded.
  • 1 cup Tomatoes Chopped.
  • 1/2 cup Jalapeños Sliced, optional.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and dice the potatoes, then toss them in olive oil and seasoning.
Roasting
  1. Spread the potatoes on a baking sheet and roast for 25-30 minutes until crispy.
Cooking the Beef
  1. In a skillet, cook the ground beef with the remaining seasoning until fully cooked.
Assembly
  1. Assemble the potato bowls by adding roasted potatoes as the base.
  2. Top them with cooked ground beef and all your favorite toppings like cheese, sour cream, green onions, lettuce, tomatoes, and jalapeños.

  1. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat in the microwave or oven before serving. Experiment with different toppings like guacamole or black beans for extra flavor. Adjust spice level with jalapeños or hot sauce.
