  • 4 large large baking potatoes Choose russet or similar for best results.
  • 1 cup cottage cheese Use low-fat or full-fat based on preference.
  • 1 cup shredded cheese Cheddar or your choice.
  • 4 green onions, chopped For garnish and flavor.
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • Salt and pepper to taste
  • Olive oil (for brushing) For brushing the potatoes before baking.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the baking potatoes. Prick them with a fork and brush with olive oil.
Baking
  1. Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until a fork can easily pierce through.
  2. Once cooked, let them cool for a few minutes, then cut them in half and scoop some of the potato flesh into a bowl.
Mixing
  1. Mix the scooped potato flesh with cottage cheese, shredded cheese, green onions, sour cream, salt, and pepper.
Stuffing and Final Baking
  1. Spoon the mixture back into the potato skins.
  2. Return the stuffed potatoes to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.

Notes

Serve the loaded baked potatoes right away while they're hot. Store any leftover stuffed potatoes in an airtight container in the fridge for about 3 to 4 days. For a crispy skin, bake directly on the oven rack.
