Marinade Preparation
- In a bowl, mix the lemon juice, 2 tablespoons of olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Add the chicken breasts and let them marinate for at least 30 minutes.
Potato Preparation
- Preheat your oven to 400°F (200°C).
- Toss the cut potatoes in a bowl with 1 tablespoon of olive oil, garlic powder, 1 teaspoon of salt, and 1 teaspoon of black pepper. Spread them out on a baking sheet.
Cooking
- Place the marinated chicken on another baking sheet.
- Cook both the chicken and potatoes in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and tender.
- In the last 10 minutes of cooking, add the sliced zucchinis to the oven. They should roast until tender.
Assembly
- Once everything is cooked, divide the chicken, potatoes, and zucchini into meal prep containers.
Notes
For more flavor, let the chicken marinate overnight. Use different veggies according to your preference, like bell peppers or broccoli. Adjust the spices based on your taste. If you like it spicy, add some red pepper flakes. You can replace the chicken with shrimp or tofu for a different protein option. Swap yellow potatoes with sweet potatoes for a sweeter taste.
