Ingredients
  

For the marinade
  • 2 pieces chicken breasts, diced Skinless, boneless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 piece lemon, juiced Freshly squeezed
  • to taste Salt and pepper Adjust according to preference
For the bowl
  • 1 cup broccoli florets
  • 1 piece bell pepper, sliced Any color bell pepper
  • 1 cup cooked quinoa or rice Can use farro or couscous as alternatives

Method
 

Preparation
  1. In a bowl, mix olive oil, garlic, lemon juice, salt, and pepper.
  2. Add the diced chicken and marinate for at least 30 minutes.
Cooking
  1. Heat a skillet over medium heat and cook the marinated chicken until fully cooked.
  2. In the same skillet, add broccoli and bell pepper to sauté until tender.
  3. Serve the chicken and veggies over cooked quinoa or rice.

Notes

Lemon Garlic Chicken Bowl is best served hot. Garnish with a slice of lemon or fresh herbs for extra flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage. For best results, separate chicken and veggies from quinoa or rice when freezing.
