  • 2 tablespoons olive oil for cooking
  • 4 cloves garlic, minced
  • 1 cup chicken broth ensure gluten-free if needed
  • 1/2 cup fresh lemon juice fresh juice preferred
  • 1/4 cup capers adjust according to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken and cook until golden brown on both sides, about 5-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze.
  7. Stir in capers and return the chicken to the skillet.
  8. Simmer for about 10 minutes until the chicken is cooked through and the sauce thickens slightly.
  9. Garnish with fresh parsley before serving.

This dish pairs well with pasta, rice, or a fresh salad. Store leftovers in an airtight container for up to 3 days.
