Ingredients
  

Main Ingredients
  • 1 whole zucchini
  • 1/4 cup blanched almond flour Substitute with pork rinds if preferred.
  • 1/2 cup grated parmesan cheese
  • 2 large eggs Optionally add a bit of milk to the egg wash.
Seasonings
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon paprika
Preparing the Mix
  • 2 tablespoons melted butter Only needed if using almond flour; optional for pork rinds.

Preparation
  1. Cut the zucchini into fries.
  2. In one bowl, beat the eggs.
  3. In another bowl, mix the almond flour, grated parmesan cheese, and all the seasonings.
  4. If using almond flour, add melted butter to the mix.
Cooking
  1. Preheat air fryer or oven to 400°F (200°C).
  2. Dip the zucchini fries into the egg wash, then coat with the mixed dry ingredients.
  3. In the air fryer, arrange the fries without crowding, spray with oil, and bake for 7-10 minutes until golden brown.
  4. In the oven, spread fries evenly on a baking sheet or wire rack and bake for 15-20 minutes or until golden brown.

Notes

Cut zucchini into even strips for uniform cooking. Don't overcrowd the air fryer or baking sheet for crispy results. Experiment with different seasonings to match your taste.
