Preparation
- Preheat your oven to 400°F (200°C).
- Lightly grease a mini muffin pan with cooking spray or oil.
- Place one slice of pepperoni into each muffin cup to form a base.
- In a bowl, mix the mozzarella, parmesan, and Italian seasoning.
- Add a small spoonful of the cheese mix on top of the pepperoni.
- If using sauce, add a small dot under or over the cheese.
Baking
- Bake for 10 to 12 minutes until the cheese is golden and bubbly.
- Let cool for 5 minutes before removing from the pan.
Notes
Serve warm as a snack or appetizer. Pair with low-sugar marinara for dipping. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving. To customize, try adding green peppers, olives, cooked sausage, bacon, or different cheeses.
