  • 24 slices pepperoni Use low sugar for keto-friendly options.
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon Italian seasoning Optional for extra flavor.
  • 2 tablespoons low sugar pizza sauce Optional for topping.
  • Cooking spray or olive oil For greasing the muffin pan.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a mini muffin pan with cooking spray or oil.
  3. Place one slice of pepperoni into each muffin cup to form a base.
  4. In a bowl, mix the mozzarella, parmesan, and Italian seasoning.
  5. Add a small spoonful of the cheese mix on top of the pepperoni.
  6. If using sauce, add a small dot under or over the cheese.
Baking
  1. Bake for 10 to 12 minutes until the cheese is golden and bubbly.
  2. Let cool for 5 minutes before removing from the pan.

Notes

Serve warm as a snack or appetizer. Pair with low-sugar marinara for dipping. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving. To customize, try adding green peppers, olives, cooked sausage, bacon, or different cheeses.
