Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the ground beef, crushed pork rinds, eggs, onion, garlic, salt, pepper, and any optional herbs or spices.
- Mix well until all ingredients are thoroughly combined.
- Grease a muffin tin or line it with muffin liners.
- Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
- Top each muffin with a spoonful of low carb ketchup.
- Bake for about 25-30 minutes, or until cooked through and the muffins are browned.
- Let cool slightly before removing from the muffin tin. Serve warm.
Notes
Keto Meatloaf Muffins can be served on their own, with a side salad, or with steamed vegetables. They pair well with extra low carb ketchup or mustard. To store leftovers, use an airtight container in the refrigerator for up to 3-4 days, or freeze in a freezer-safe container for 2-3 months. Reheat in the microwave or oven.
