  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 cup pork rinds, crushed
  • 2 large eggs
  • 1/2 cup low carb ketchup For topping.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • to taste Salt
  • to taste Pepper
  • Optional: herbs and spices (like Italian seasoning or smoked paprika)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the ground beef, crushed pork rinds, eggs, onion, garlic, salt, pepper, and any optional herbs or spices.
  3. Mix well until all ingredients are thoroughly combined.
  4. Grease a muffin tin or line it with muffin liners.
  5. Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
  6. Top each muffin with a spoonful of low carb ketchup.
  7. Bake for about 25-30 minutes, or until cooked through and the muffins are browned.
  8. Let cool slightly before removing from the muffin tin. Serve warm.

Notes

Keto Meatloaf Muffins can be served on their own, with a side salad, or with steamed vegetables. They pair well with extra low carb ketchup or mustard. To store leftovers, use an airtight container in the refrigerator for up to 3-4 days, or freeze in a freezer-safe container for 2-3 months. Reheat in the microwave or oven.
