Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and minced garlic. Cook until the mushrooms are tender, about 5 minutes.
  3. In a mixing bowl, combine the cooked chicken, sautéed mushrooms, heavy cream, half of the cheese, salt, and pepper. Mix well.
  4. Pour the mixture into a greased baking dish. Top with the remaining cheese.
Baking
  1. Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
  2. Remove from the oven and let it cool for a few minutes before serving.

Notes

Serve warm, garnished with fresh parsley if desired. This casserole pairs well with a side salad or steamed vegetables. You can also serve it over a bed of cauliflower rice to add healthy veggies. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen before baking.
