Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the garlic and sauté until fragrant.
- Add the sliced mushrooms and cook until tender.
- In a large bowl, combine the cubed chicken, heavy cream, sautéed mushrooms, and Italian seasoning. Season with salt and pepper.
- Transfer the mixture to a greased casserole dish and top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
This casserole can be served warm with a green salad or steamed vegetables. Store leftovers in an airtight container for up to three days in the fridge, or freeze for up to three months. Reheat in the oven or microwave before serving.
