  • 1 cup marinara sauce (low-carb) Ensure it is a low-carb option
  • 1 cup shredded mozzarella cheese Can substitute with other cheeses if desired
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced olives
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked chicken or ground beef with marinara sauce.
  3. Layer the mixture into a baking dish.
  4. Add bell peppers, mushrooms, and olives on top.
  5. Sprinkle Italian seasoning, salt, and pepper over the top.
  6. Generously cover with shredded mozzarella cheese.
  7. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

Serve hot with fresh basil or red pepper flakes for extra flavor. Pairs well with a side salad. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
