Preparation
- Preheat the air fryer to 380°F (193°C).
- In a bowl, mix almond flour, grated Parmesan cheese, salt, pepper, and Italian seasoning.
- In another bowl, beat the eggs.
- Dip each chicken breast into the egg, then coat with the almond flour mixture.
- Drizzle olive oil over the coated chicken.
Cooking
- Place the chicken in the air fryer basket and cook for about 10-12 minutes, flipping halfway through, until golden brown.
- Top the cooked chicken with sugar-free marinara sauce and mozzarella cheese.
- Cook for an additional 2-3 minutes in the air fryer until the cheese is melted.
Serving
- Serve hot, optionally with a side salad or steamed vegetables.
Notes
Pound chicken breasts evenly for even cooking. Adjust seasonings to your preference. Garlic powder can be added for extra flavor. If not using an air fryer, bake in oven at 400°F (200°C) for 20-25 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to three days or frozen for longer storage.
