  • 2 pieces boneless, skinless chicken breasts
  • 1 cup fresh spinach
  • 1 cup cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • as needed Olive oil for cooking

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the cream cheese, spinach, mozzarella, garlic powder, salt, and pepper.
  3. Cut a pocket in the side of each chicken breast and stuff it with the spinach mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat, and sear the chicken on both sides until golden brown.
  2. Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes or until fully cooked.
Serving
  1. Serve warm alongside a side salad, steamed vegetables, or cauliflower rice.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave when ready to eat.
