Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the cream cheese, spinach, mozzarella, garlic powder, salt, and pepper.
- Cut a pocket in the side of each chicken breast and stuff it with the spinach mixture.
Cooking
- Heat olive oil in a skillet over medium heat, and sear the chicken on both sides until golden brown.
- Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes or until fully cooked.
Serving
- Serve warm alongside a side salad, steamed vegetables, or cauliflower rice.
