Ingredients
  

Filling
  • 2 cups cooked chicken, shredded Use rotisserie or leftover chicken for convenience.
  • 1 cup cream cheese, softened Ensure it's softened for easier mixing.
  • 1/2 cup ranch dressing Use your favorite brand.
  • 1 cup cooked bacon, chopped Can use turkey bacon for a lighter option.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to mix different cheeses.
For Taquitos
  • 1 pack low-carb tortillas Choose gluten-free if needed.
  • to taste salt and pepper Use to season the filling.
  • as needed oil for frying (optional) Can be omitted if baking.

Method
 

Preparation
  1. In a large bowl, mix together the shredded chicken, cream cheese, ranch dressing, chopped bacon, and shredded cheese. Season with salt and pepper to taste.
  2. Take a low-carb tortilla and place a few tablespoons of the chicken mixture in the center. Roll tightly to form a taquito.
  3. Repeat until all filling is used.
Cooking
  1. Heat oil in a skillet over medium heat, and fry the taquitos until golden and crispy on both sides.
  2. Alternatively, you can bake them at 400°F (200°C) for 15-20 minutes until crispy.
Serving
  1. Serve taquitos hot with additional ranch dressing for dipping. Pair with a fresh salad or veggies.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven or skillet until crispy. You can use cooked beef or turkey instead of chicken and try spicy ranch for extra flavor.
