  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste Salt and pepper
  • 1 cup enchilada sauce
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned, adding the onion and garlic halfway through.
  3. Stir in the diced tomatoes, chili powder, cumin, salt, and pepper.
Assembly
  1. In a baking dish, layer the beef mixture and top with shredded cheese.
  2. Pour enchilada sauce over the top.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Serving
  1. Cut the enchiladas into squares and serve on individual plates or a serving platter.
  2. Add a dollop of sour cream on top and garnish with fresh cilantro.

Notes

For quicker preparation, use leftover cooked beef or rotisserie chicken. Experiment with different cheese for a unique twist. Adjust spices to suit heat preference.
